Garlic Chicken Pasta with Summer Squash

This recipe is simple, light, and flavorful! A perfect summer dish! Both my 4 year old and 9 month old loved this, which is a keeper in my book. The squash gives a nice bite to this dish. You could sub any fresh veggies you have on hand and it would be just as delicious. Dont let the amount of oil scare you off.







Garlic Chicken Pasta with Summer Squash

Ingredients:

5T olive oil
2t minced garlic
3 boneless skinless chicken breasts- cubed
Salt and Pepper to taste
Dash of red pepper flakes
1 box penne pasta
1/2 yellow squashed- diced
1T dried basil
4T lemon juice
1/2c parmesan cheese

Directions:

Heat olive oil, garlic, and red pepper flakes in a small glass bowl in the microwave for about 1 minute to blend flavors. Pour 1T of the oil in a skillet. Salt and pepper the chicken and cook in the oil over med-high heat. Add the chopped squash and saute with chicken for about 5 minutes, remove from heat. Meanwhile, cook pasta according to package and drain well. Add the chicken and squash to the pasta, along with the basil, lemon juice, and parmesan cheese. The stir in the remainder of the flavored olive oil. Toss until all ingredients are well combined.

  2. the recipe doesn't need these many steps, especially the dang microwave, that isn't cooking.
    folks simply Cook your chicken in a pan with regular olive oil (flavors blend best in a pan not a microwave), cook until white on the outside, add garlic and squash, cook until squash is tender or to your liking. Cook your pasta as directions say, when that is done combine cook chicken mix with the pasta and basil, lemon juice (though if you wanted that to mix well with the recipe you should have used it in the actual cooking process) and Parmesan cheese. Toss and serve.
